A portable version from the traditional pizza, in muffin form designed for easy clean up.
The current recipe serves 2 dozen mini muffins. Feel free to adjust the recipe accordingly to increase or decrease your serving amounts.
Ingredients:
- 2 tbsp olive oil
- 2/3 cup chopped onion
- 2/3 cup chopped red bell pepper
- 1/3 cup whole wheat flour
- 1/3 cup flour
- 2 tsp baking powder
- 1 1/2 tsp chopped oregano
- 1 tsp sugar
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/3 cup skim milk
- 1/3 cup feta cheese
- 1 beaten egg
- 2 tbsp tomato paste
Directions
- Heat oil in skillet over medium heat. Add onion and pepper and cook 5 minutes. Let cool for 10 minutes.
- Preheat oven to 400 degrees and grease a mini muffin pan.
- Whisk flours, baking powder, oregano, sugar, garlic powder, and salt.
- Stir milk, feta, egg, and tomato paste into the onion mixture. Then transfer egg mixture from skillet into flour mixture. Stir until just combined.
- Fill muffin cups to 2/3 full. Bake until lightly browned, 13-15 minutes.
