Ingredients
Before getting started make sure you head to the store and grab the following ingredients if you do not have them already.
- 1 cup instant (quick-cook) oats (correctly measured)
- ¾ cup whole wheat flour (correctly measured)
- 1 ½ tsp baking powder
- ½ tsp ground cinnamon
- 1/8 tsp salt
- 2 tbsp coconut oil, melted
- 1 egg, room temperature
- 1 tsp vanilla extract
- ½ cup honey
- ¼ cupdried blueberries
Directions
- Preheat oven to 325 degrees F (163 degrees C). Use parchment paper to line the baking sheets or Silpat.
- Whip all together in a medium-sized bowel the flour, oats, baking powder, cinnamon, and salt.
- Beat together the coconut oil, egg, and vanilla in a separate bowl. Pour and stir in the honey until thoroughly mixed.
- Add in the flour mixture, stir thoroughly. Fold in the blueberries. Chill the dough for 30 minutes.
- Spoon dough into 15 scoops lined on the baking sheet at about 2 inches apart.
- Bake at 325°F (163 degrees C) for 13-15 minutes until golden brown. Leave to cool on the baking sheet for at least 15 minutes, and then place to a wire rack.
