A portable version from the traditional pizza, in muffin form designed for easy clean up.
Makes: 2 dozen mini muffins
Ingredients:
- 2 tbsp olive oil
- 2/3 cup chopped onion
- 2/3 cup chopped red bell pepper
- 1/3 cup whole wheat flour
- 1/3 cup flour
- 2 tsp baking powder
- 1 1/2 tsp chopped oregano
- 1 tsp sugar
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/3 cup skim milk
- 1/3 cup feta cheese
- 1 beaten egg
- 2 tbsp tomato paste
Directions:
1. Heat oil in skillet over medium heat. Add onion and pepper and cook 5 minutes. Let cool for 10 minutes
2. Preheat oven to 400 degrees and grease a mini muffin pan.
3. Whisk flours, baking powder, oregano, sugar, garlic powder, and salt.
4. Stir milk, feta, egg, and tomato paste into the onion mixture. Then transfer egg mixture from skillet into flour mixture. Stir until just combined.
5. Fill muffin cups to 2/3 full. Bake until lightly browned, 13-15 minutes.
