Paleo Omelet Muffins

Ingredients

  • Eggs 8 16
  • Cooked Ham 8 oz 1 pound
  • Chopped Red Bell
  • Pepper
  • 1 cup 2 cups
  • Diced Onion 1 cup 2 cups
  • Salt 1/4 tsp 1/2 tsp
  • Black Pepper 1/8 tsp 1/4 tsp
  • Water 2 tbsp 4 tbsp

Directions

  1. Preheat oven to 350.
  2. Grease 8 muffin cups or line with paper liners.
  3. Beat eggs together in a large bowl.
  4. Mix in ham, bell pepper, onion, salt, black pepper, and water into the beaten eggs.
  5. Pour egg mix evenly into muffin cups.
  6. Bake until set in the middle, about 18-20 minutes.
