Gluten Free Power Granola

Ingredients

  • Regular Oats 1/4 cup
  • Flaxseed (ground) 1/4 cup
  • Walnuts (chopped) 2 tbsp
  • Almonds (chopped) 1/2 tsp
  • Ground Cinnamon 1 1/2 tbsp
  • Orange Juice 3/4 cup
  • Honey 3/4 cup
  • Brown Sugar (packed) 1/2 cup
  • Canola Oil 3/4 cup
  • Vanilla Extract 1 tbsp
  • Dried Cranberries 1 1/2 tsp

Directions

  1. Preheat oven to 300.
  2. Combine first 5 ingredients in a medium sized bowl.
  3. Combine orange juice, honey, brown sugar in a small saucepan. Cook over medium heat until sugar dissolves, stirring frequently.
  4. Remove from heat, stir in oil and vanilla.
  5. Pour honey mixture over oat mixture, stirring to coat.
  6. Spread mixture in a thin layer onto a pan coated with cooking spray. Bake at 300 degrees for 10 minutes, stirring well.
  7. Bake an additional 10-15 minutes or until golden brown. Spoon granola into a bowl, stir in dried cranberries.
